The weather is finally starting to feel “fallish” around here for a few hours in the morning and in the evenings… so fall food is on my mind and what better recipe to start with but something with apples!
Ingredients:
1 large can crushed pineapple
2 Tablespoons flour
2 Tablespoons apple cider vinegar
1/2 Cup sugar
1 egg
6 Granny Smith apples
2 Tablespoons lemon juice
3/4 Cup peanuts
8 ounces Kool Whip
Drain crushed pineapple.
Add 2 Tablespoons flour.
Add 2 Tablespoons apple cider vinegar.
Add 1/2 Cup sugar.
Add 1 egg.
This is one of my favorite tools to whisk up ingredients. So grab something and mix this all up.
Transfer this pineapple mixture to a small saucepan and on medium-low heat, stir continually for about 8-10 minutes.
Once it is the thickness of a pudding, transfer it to a glass bowl.
Store this in the refrigerator until it is cool.
Dice up the Granny Smith apples leaving the skins on.
Toss them in a bag with lemon juice to keep them from turning brown.
Once the pineapple mixture is cool and all the apples are diced, mix them together in a large bowl.
Add 3/4 cup peanuts to the apples and mix it up.
Fold in 8 ounces of Kool Whip.
I am at a loss as to why this tastes just like a caramel apple but it does and it disappears quickly. Enjoy! T
