Let me begin by saying that if you do not like sauerkraut, ignore this post. But if like me, you love finely shredded pickled cabbage, then read on because this is one of my favorites!
SUPER SIMPLE INGREDIENTS:
- 14 ounce can sauerkraut – drained
- 1 large onion – sliced thin
- 3 medium potatoes – sliced thin
- kielbasa sausage – sliced, not so thin
- fresh mushrooms – sliced
- 1 can cream of mushroom soup
- 1 Cup sour cream
- 2 Cups shredded cheddar cheese
Grease a 9×13 inch baking dish. Drain your sauerkraut.
Cover the bottom of your greased dish with the sauerkraut.
Thinly slice your onion.
Evenly scatter the onions over the sauerkraut.
Thinly slice your potatoes.
Layer the potatoes over the onion.
Slice up your kielbasa sausage.
Cover the potatoes with the sliced sausage.
Slice up your mushrooms. and guess what..
Scatter the sliced mushrooms over the sausage.
Mix together the can of cream of mushroom soup and cup of sour cream. Spread this over the casserole.
Preheat your oven to 350 degrees and cover this with foil. Bake for 1 hour.
Remove your foil and add your shredded cheddar cheese to the top. Stick this back in the oven for 15 minutes.
Let stand for 20 minutes and the dish it up.
