We eat a lot of chicken. A LOT! I am always trying anything that can add a new variety to my chicken. This recipe is adapted from one I found in my favorite magazine, Taste of Home.
SUPER SIMPLE INGREDIENTS:
- 1 bag fresh baby spinach
- 8 oz fresh mushrooms
- 3 green onions (I had chives on hand so that is what I used.)
- 2 cloves garlic
- 3 tablespoons olive oil, divided
- salt and pepper to taste
- 6 chicken breasts
- your favorite seasoning for chicken
- swiss cheese
- garnished with parsley (cause I love that extra flavor but not needed)
Chop up the mushrooms, onions and garlic.
Saute the mushrooms, onions, garlic and spinach in 1 tablespoon olive oil. Add a sprinkling of salt and pepper and toss this up.
You will cook this until the mushrooms are tender and spinach wilted. Just toss every few minutes to get even cooking.
While your shrooms and spinach are cooking, heat up a skillet and add the last 2 tablespoons of olive oil. Sprinkle your chicken with your favorite seasoning and cook your chicken until done. Time depends all on how thick your chicken is but mine took about 7 minutes per side.
*You can also grill these chicken breasts if you have a hankering to make life easier on yourself. It was too cold out this night, so I opted for cast iron. =)
Once chicken is cooked, slice up your swiss cheese and layer that on the chicken.
Place under your broiler until cheese is melted.
Top the chicken and melted cheese with your spinach and shrooms and enjoy!
