I found this recipe on The Pioneer Woman and immediately knew it would be a perfect meal for that night each week when I need something on the table quick and healthy. My family and I love cheeseburgers and this salad is a cheeseburger turned inside-out. Perfect!
- 2 pounds ground beef
- 1/3 cup ketchup
- 1 teaspoon yellow mustard
- 2 tablespoons spicy mustard
- 2 tablespoons barbecue sauce
- 2 heads green-leaf lettuce
- 1 cup grated sharp cheddar cheese
- 1 whole tomato
- 1 cup sliced dill pickles
- your favorite dressing
In a skillet, brown your meat over medium-high heat.
While meat is cooking, cut up the lettuce and grate your cheese.
Dice up your tomato and dill pickles.
Once the meat is browned, add the ketchup, yellow mustard, spicy mustard and barbeque sauce to the skillet.
Mix this together and begin assembling your inside-out cheeseburger.
If there are other items you usually enjoy on your burger like onions or grilled mushrooms, well have at it! Top with your croutons (which would have been the bread of your bun) and then drizzle on your favorite dressing. Enjoy! We did!
