Southwest Chicken Salad

My sister emailed me this recipe 2  1/2 years ago and it got stuffed into a recipe folder I created and forgotten.   I was going through my email folders and found it last week and decided to put it on the menu this week.  I tweaked the original recipe a bit based on the things I keep on hand.

It was fantastic!

You know me, simple ingredients makes for a happy Tara.

INGREDIENTS:

  • 3 chicken breasts
  • salt/pepper
  • 2 tablespoons olive oil
  • 3/4 cup mayonnaise
  • 2 teaspoons dried cilantro
  • 3 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 teaspoons garlic powder
  • 1 teaspoon cumin
  • 3/4 cup poblano pepper
  • soft taco size flour tortillas

Heat a skillet to medium heat.  Sprinkle chicken with salt and pepper.  Pour 2 tablespoons of olive oil into heated skillet and cook chicken until done.

I like to pound out my chicken pieces so the cooking time doesn’t take as long and they all get done at the same time.

While the chicken is cooking, mix together the mayonnaise, lime juice, and all the seasonings and place in the refrigerator so the spices can “marry” with the mayo and make a greater flavor.

Poblano peppers are similar to bell peppers with a mild heat.  They can easily be found in the produce section and look similar to bell peppers just a little more narrow and color is a deeper green.

Split the poblano pepper lengthwise and remove all the seeds and veins and then slice the pepper into thin strips and then dice up the strips. I only needed half my pepper for this recipe because they can come quite large.

Once chicken is cooked, I like to cut my chicken into large chunks and stick in a food processor and give it a whirl until the chicken is fine.  If you like more chunk just use a knife to cut the chicken into the size pieces you want.

Allow the chicken to cool a bit and then mix together the mayonnaise mixture, the chicken and the pepper.

Lay the tortillas in a damp towel and wrap them up.  Microwave for 20 seconds to warm them up.  Keep them wrapped until ready to load the tortilla.

Toppings will complete this chicken salad wrap.  Whatever you like, add it.

Toppings:

  • shredded cheese
  • lettuce
  • sour cream
  • tomatoes
  • mango
  • avacado
  • black olives
  • salsa
