Asparagus is a vegetable that you either love or hate. I am in love with asparagus! I make these and eat them like french fries before even serving them for dinner. And because of this, I always make more than enough cause half will be gone before dinner.
4 pounds fresh asparagus
2 Tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1/4 cup butter
4 teaspoons soy sauce
2 teaspoons balsamic vinegar
You want to snap the tough ends off the asparagus. Hold the top side of the asparagus (right below the dark green tips) in one hand and the end of the aspargus in the other hand. Gently bend it and it will snap in half. Discard the tough end and keep the top portion.
Drizzle olive oil over asparagus and then sprinkle salt and pepper. Toss asparagus so it is well coated. Put this into a preheated 400 degree oven for 15 minutes.
Melt butter in a small saucepan over medium heat.
You are wanting to brown the butter but do not burn it. This takes about 4 minutes so stir and watch. Browned butter tasty….burned butter smells up kitchen.
Once the butter turns a light brown, take the saucepan off the heat.
Add soy sauce.
Add balsamic vinegar.
Whisk this together.
When you have removed the asparagus from the oven, drizzle the browned butter mixture over them and serve immediately or just stand there and eat.
