Broccoli Cheese Casserole

My sister made this broccoli casserole years ago and I fell in love.


2 pounds fresh broccoli

1 can cream of mushroom soup

1/2 Cup mayonnaise

1  1/2 Cups shredded cheddar cheese

1 Tablespoon lemon juice

2 Cups crushed cheese crackers

Ahhh… beautiful broccoli.

Cut broccoli up into pieces.  My kids are not fans of the stems so I just trim those down as far as they will go.  They say they like the tops of the “trees” not the “trunks”.  I aim to please.

Bring about an inch of water to a boil.

Add broccoli and the lid and let steam for 3-4 minutes.

Drain broccoli.  They should be a deep green.

In a bowl, mix together the cream soup, mayonnaise, cheese and lemon juice..

That looks just right.

Place broccoli in a casserole dish.

Top with the cream soup and cheese mixture.

Spread that around.

Grab a handful of cheese crackers.

Crumble the crackers over the top of the casserole.  Grab as many handfulls as you need to nicely cover the top.

Bake uncovered in a 350 degree oven for 30-40 minutes.

Oh. Yes.

  1. hmm, that looks alot more simple then i remember. I’m such a sucker for cream cheese; this would not last long with me around! A new dish i hope to get around to soon! Thanks for sharing this!
