Pot Tacos

This is another family favorite in my  home and so very easy.


2 pounds ground meat

1 large onion

4 ounce can chopped green chilis

4 (16 ounce) cans diced tomatoes

16 ounce can whole corn

15 ounce can kidney beans

packet dry ranch seasoning

packet dry taco seasoning

In a large pot brown 2 pounds of ground meat on medium-high heat.

While the meat is cooking, chop up 1 large onion.

Remove browned meat from the pot and drain the grease in a collander.  Put the chopped onion in the heated pot.

Brown the onions over the medium-high heat.

Return the meat to the pot and add 1 can of kidney beans (do not drain the beans, add the liquid with the beans).

Add 4 cans of diced tomatoes (again, do not drain these cans, add the liquid with the tomatoes).

Add can of corn (do not drain the liquid, add it with the corn).

Add the can of green chilis with their liquid also.

Add both packets of seasonings and stir to combine all the ingredients. Bring this to a boil and then reduce the heat to low.

Cover your pot and allow to simmer on low for 30 minutes.

Serve with sour cream, grated cheddar cheese and tortilla chips.
